Have you ever had one of those weekends when all you want is a burger  Not just any burger, but a big and juicy one the kind you’d find in a cozy pub in Dublin where you’ve got a pint in hand and nothing else on your to-do list.Well, that was exactly how I felt last Saturday.

We were supposed to be cleaning out the garage however I got sidetracked because I started thinking about cooking instead. Let’s be honest—priorities. I suddenly remembered this amazing burger I had years ago at a small Irish pub. It had a thick beef patty, gooey cheddar cheese, crispy bacon and a whiskey-infused sauce that I still dream about.

So I figured—why not try to make it myself

At first, it didn’t go as planned because the first patty completely fell apart in the pan. I had added too much stout. Classic me. But then, once I got the ingredients balanced just right, it turned out incredible. We’re talking about that perfect bite where everything melts in your mouth and the flavors just explode.

Also, quick side note—the whiskey aioli Let’s just say it’s addictive. I may have taste-tested it five times,No regrets there.

How to Make Delicious Irish Pub Burger

Step 1

Prepare the Sauce : In a small bowl, mix the mayonnaise, Guinness beer, Dijon mustard, Worcestershire sauce, and a pinch of salt and pepper. Stir until smooth. Chill in the fridge while you prepare the rest.

Caramelize the Onions : Heat a pan over medium heat and add a little oil. Toss in the sliced onions and cook slowly for 10–15 minutes until soft and golden. Stir often so they don’t burn. Set aside.

Step 2

Cook the Bacon : In the same pan or a new one, cook the bacon over medium heat until crispy. Place it on a paper towel to drain the grease.

Make the Burger Patties : In a bowl, mix the ground beef with salt, pepper, garlic powder, and onion powder. Form into 4 equal patties. Press a small dent in the center of each to keep them from puffing up when cooking.

Step 3

Cook the Burgers : Heat a grill or skillet over medium-high heat. Cook the patties for about 3–4 minutes per side or until desired doneness. Add a slice of cheddar during the last minute so it melts perfectly.

Toast the Buns : Spread a little butter on each half of the brioche buns and toast them in a pan or on the grill until golden brown.

Assemble Your Burger : Spread some of the Guinness sauce on the bottom bun, add the burger patty with melted cheese, top with bacon, caramelized onions, and a little more sauce. Place the top bun and press gently. Done!
