How to Make Perfect Egg Mix for Deviled Eggs

There are a few foolproof ways for getting the perfect color and hardness of the egg yolks, not too liquid not too hard. (and do not forget a pinch of salt)

Key Tips to Boiling Eggs for Deviled Egg Recipe.

1. In a medium-sized pan, place the eggs in cold water or warm water. Putting the eggs in warm water first will prevent the eggshells from cracking. Then bring to the boil.  If you boil first and place cold eggs in hot water the shell will crack.

2. Water: Heat or bring to the boil.  As soon as you have boiling water, turn off the heat and cover the pot. Let the eggs remain in the pot for 10-12 minutes. You will need to experiment to get the perfect hard-boiled

3. Fill a large mixing basin halfway with an ice bath or cool water.  Place the eggs hot into the cold water bath. Chill the eggs for approximately 5 minutes in the bowl.

4. To remove the eggs from the shell. Start by rolling them on the counter, this is the best way. Cooling them in iced water first also helps the shells come off.  Ensure there are no little bits of shell on the eggs by rinsing them.

What Should You Do If Your Deviled Eggs Are Too Runny?

If you have a runny mixture or runny filling what do you do?

1. Use additional eggs to fix a runny mixture. Hard-boil a couple of additional eggs and extract the yolks.

Add some mayonnaise to the light batch and stir to combine. It should thicken up quickly. You can also add a dash of lemon juice to stop a gray color-forming or color runs of the egg mixture.

If the color is off, but the state is nice – recover the color by using yellow mustard powder.

2. If you have a package of instant mashed potatoes on hand, add a bit at a time until your deviled egg mixture reaches the desired consistency. You can also use mashed potatoes, or even a baked potato center, just use a potato masher first to pre it for thickening the original classic mixture of eggs

3. To thicken your deviled eggs, repeat the technique using bread crumbs. Make sure you’re using plain bread crumbs rather than the seasoned kind. Breadcrumbs are an excellent thickening agent.

4. Do not attempt to boost your egg mixture with flour. You’ll end up with a distinct texture and flavor for the deviled eggs that you won’t like. 

You can also use a mayonnaise mixture to blend in the breadcrumbs and get a great creamy texture of this party favorite.

1. Try pairing them with smoked salmon. This combination works especially well when paired with a spicy horseradish sauce.

2. A good accompaniment to deviled eggs is a simple salad of mixed greens. Dress the greens lightly with olive oil and vinegar.

3. For a special treat, pair deviled eggs with a slice of cheese. Use cheddar, Swiss, Gouda, or any other hard cheese you enjoy.

4. Deviled eggs work well as appetizers before a meal. Just be careful not to overdo it.
